DIY Clif Bars

On a recent trip to the states for my brother's wedding, my hubby had Clif Bars for the first time and fell in love. Of course we can't buy Clif Bars here, so we had to come up with our own recipe to make the chewy snacks. 


People need energy in Spain too...




Here's our home-made cliff bar recipe



Ingredients: 


1 cup raw oats
1 cup oat bran
1 tbs chia seeds (we added this ourselves because we love chia, but you can use flaxseed as well)
1/4 cup chopped dried fruit (you can use anything, we used cranberries and rasins)
1/2 cup peanut butter (you can use any nut/seed butter, almond, sunflower, etc)
1/4 cup chopped nuts (I used almonds)
1/3 cup brown rice syrup (this is what cliff bars actually uses, but since I couldn't find it, I used honey)
1 tsp vanilla extract
1/2 tsp cinnamon




Mix all of the dry ingredients in a large bowl until well combined 
Meanwhile, melt the peanut butter and rice syrup (or honey in this case) in a small sauce pan. Stir in the vanilla until well combined


Mix the peanut butter combination with the dry ingredients until the oats are well coated. It works best if you mix it with your hands. Press the mixture into a shallow baking dish sprayed with non stick cooking spray or lined with wax paper. When it's cooled you can cut it into smaller bars and store in the refrigerator
